Viral Chopped Grinder Pasta Salad

A cold, creamy pasta salad inspired by classic grinder sandwiches, loaded with meats, cheese, tangy dressing, and a crisp lettuce finish. Perfect for parties or meal prep!

Ingredients

For the dressing:

  • 1 cup real mayonnaise
  • ¼ cup red wine vinegar
  • 1 Tablespoon extra virgin olive oil
  • 2 cloves garlic finely minced
  • 1 teaspoon Italian herb seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon crushed red pepper flakes
  • ½ teaspoon ground black pepper

For the salad:

  • 1 pound rotini pasta cooked
  • ½ cup thinly sliced salami cut into strips
  • ½ cup pepperoni cut into strips
  • ½ cup deli ham cut into strips
  • 8 ounces provolone cheese cut into cubes
  • 10 ounces cherry or grape tomatoes cut in half
  • 1/4 head of iceberg lettuce shredded
  • 1/2 cup pepperoncinis chopped
  • ¼ cup sliced black olives optional

Instructions

  • Whisk dressing ingredients until smooth and chill until ready to use.
  • Boil rotini pasta, drain, and rinse under cold water.
  • Combine pasta, meats, cheese, tomatoes, pepperoncini, and olives in a large bowl.
  • Pour dressing over the mixture and toss until evenly coated.
  • Chill for at least 30 minutes.
  • Fold in shredded lettuce just before serving.
  • Toss and serve chilled.

Notes

Keep the pasta salad for 2-3 days in the refrigerator in an airtight container.
