Christmas Grinch Themed Meringue Pops

Light, crispy meringue pops piped in swirls, baked low and slow, then decorated with candy hearts for a festive Grinchy holiday treat.

Ingredients

  • 3 egg whites room temperature
  • ¾ cup superfine sugar
  • 1 tsp vanilla extract
  • ¼ tsp cream of tartar
  • pinch of salt
  • Green gel food coloring
  • 1 tbsp white chocolate chips
  • Candy hearts

Instructions

  • Preheat oven to 200°F and line a baking sheet with parchment.
  • Beat egg whites and salt until frothy. Add cream of tartar.
  • Slowly add sugar, 1 tbsp at a time, mixing until dissolved.
  • Beat in extract. Whip until stiff peaks form.
  • Add green food coloring.
  • Fill piping bag and pipe circles on parchment, anchoring sticks if using.
  • Bake 1 hour. Leave in oven to dry 2 hours or overnight.
  • Melt white chocolate and dab on meringues. Attach candy hearts.
  • Store in a dry, airtight container.

Notes

  • Add sugar slowly for the best texture.
  • Gel coloring keeps the meringue thick and pipeable.
  • Store in a non-humid spot so they stay crisp.
  • If you don't have superfine sugar, you can blend regular sugar until it's fine.
  • If desired, use almond, orange, or other flavors of extracts.
